    Goat Cheese & Sundried Tomato Stuffed Chicken Breast With Golden Mashed Potatoes

    Stuffing your chicken breasts is a great way to add some extra flavor to your chicken and also helps keep the breast nice and moist while it cooks. 

    In this recipe, we stuffed our VG Meats chicken breasts with a mixture of our Cookstown organic dried tomatoes, Celebrity goat cheese, August Harvest's garlic and shallots and Niagara Vinegar baco noir balsamic. Served on a bed of creamy garlic and thyme mashed Goldenheart potatoes, this recipe is the perfect dinner for any night of the week!

    Method

    For the Goat Cheese & Dried Tomato Stuffed Chicken Breast:

    First thing's first, prep your chicken breast stuffing mixture! Start by peeling and mincing your shallots and garlic and set them aside.

    Take your dried tomatoes and cut them in thick slices (f your tomatoes are hard, place them in some hot water for a minute or two prior to slicing to rehydrate). 

    Remove your thyme leaves from their stems and chop them finely.

    In a large skillet over medium heat, heat your olive oil. Add your shallots and cook until translucent. Add your garlic and sauté until fragrant. Add your dried tomatoes and fresh thyme and stir to combine. Add your balsamic vinegar to the pan and allow to reduce for about a minute while stirring. The balsamic should be absorbed into the tomato mixture. Allow to cool for 5 minutes.

    Stuffing Ingredients

    Remove your goat cheese from the package and place it in a medium-sized bowl. Add your slightly cooled stuffing mixture to the goat cheese and stir to combine.

    Next, stuff your chicken. Turn your VG Meats chicken breast over and you will see there is a piece of skin already loose. Under this skin, cut a little slit deeper into the breast to house the stuffing. Add your stuffing into the pocket, season with some Zing Zesti seasoning and fold the flap of loose skin back over the stuffing. The sear should seal the filling in.

    In a large skillet over medium heat, heat some olive oil. Add your chicken breasts to the pan, folded side down and let cook for about 5-6 minutes. Carefully flip your chicken breast over and cook for an additional 5-6 minutes on the other side (or until fully cooked). 

    Remove from the pan and cover to keep warm.

    For the Garlic & Thyme Mashed Potatoes

    Take your peeled and cut Goldenheart potatoes and add them to a large pot. Fill with cold water so that the water covers the potatoes by about an inch.

    Peel and mince your garlic cloves and add them to the pot with the water and the potatoes (this really gets that garlic flavour to permeate the potatoes while they cook and also makes them nice and soft to mash together with the potatoes later!). 

    Bring the pot to a boil. Once boiling, reduce the heat to medium-high and allow to cook until the potatoes are soft and tender (about 13-15 minutes).

    In the meantime, add your butter and milk together in a bowl and microwave them for 45 seconds. You want your butter to just be melted and your milk warm but not boiling.

    Once ready, strain your potatoes and garlic in a fine mesh strainer. Transfer into a large bowl and using a potato masher, mash the potatoes until they are at your desired consistency. Add some of your milk and butter mixture and fold into the mashed p. Keep rotating between adding a bit of liquid to mixing your potatoes until your potatoes and soft and smooth (you may switch to mixing with a fork during this process).

    Feel free to add in more warm milk to reach your desired consistency, if needed. Add your chopped thyme to the potatoes and fold in to combine. 

    Scoop a generous serving of mashed potatoes onto the base of your plate, top with your stuffed chicken breast and enjoy!
