    Early Golden Plum & Blueberry Galette

    For those who might be unfamiliar, a galette is a French pastry that is very similar to a tart or a pie but with a beautifully rustic aesthetic! 

    It's essentially pastry dough folded around some sort of sweet or savoury filling. It is incredibly simple to make and extremely versatile with virtually endless options for flavour pairings, both sweet and savoury.

    Sweet Vs. Savoury Galettes

    Galettes can be either sweet, often containing a fruit-based filling, or savoury, featuring a variety of different vegetables and cheeses.

    Many popular ingredients savoury galettes include tomatoes, mushrooms, onions, potatoes, zucchini, kale, spinach, goat cheese, and ricotta - to name just a few!

    Today, we're opting for a sweet galette recipe that beautifully highlights two newly in season fruits that just arrived at The Market that perfectly compliment one another — early golden plums and blueberries!

    What is an Early Plum?

    An early plum is a beautiful, very sweet, small-sized plum that and has a bright yellow flesh with red blush. 

    We get these from Warner's Farm, a gorgeous fruit farm in the Niagara region that grows a wide variety of fruits ranging from peaches, pears and plums, to cherries, grapes and more.

    How to Make the Galette Dough

    The first step is making the galette dough as it needs at least 2 hours to chill in the fridge before it is ready to be used. 

    First, dice the cold butter and combine it with the flour and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until the butter begins to break apart (about one minute) then increase to speed 2 until it reaches the consistency of grainy dry sand.

    How to Make Galette Dough

    Return mixer to low speed, and slowly stream in milk and ice water until dough comes together. Do not overmix.

    Remove dough from the mixer, flatten into a 1” disk, wrap in plastic wrap, and chill in the fridge for a minimum of 2 hours, or overnight.

    If you do not have a stand mixer, you can use a pastry cutter to cut in your butter into your dry ingredients until the butter is pea-sized. Then, add the water and milk and then bring the dough together using your hands.

    Prepare Your Plum & Blueberry Filling

    Carefully split in half your golden plums and remove the pits. Add your pitted and halved plums, sugar, water and vanilla to a medium saucepan.

    Cook the mixture on medium heat for 5 minutes (until the plums are tender). 

    Remove the plums from the sugar and water mixture to cool on a plate. Do not throw out the sugar mixture! This makes the most delicious sauce to drizzle over your finished galette! 

    Keep your brown sugar set aside, this will go on the base of your galette when you assemble it.

    How to Assemble Your Galette

    Remove the chilled galette dough from the fridge. Unwrap it and lay it onto a lightly floured surface. 

    Roll dough to a 14-inch diameter, ¼ inch thick. Using your rolling pin, transfer the dough onto a piece of parchment paper.

    Now for the fun part! Take your time and arrange your plums (cut side down) and your fresh blueberries on the pastry. Feel free to experiment with different designs but make sure to leave about an inch wide border of pastry to fold over the filling.

    Once you're happy with your design, fold the pastry border over the filling making pleats.

    Once completed, brush the pleats of the folded pastry with a beaten egg and sprinkle with extra sugar for an added pop of sweetness. The egg wash not only helps to keep the pastry together while baking, but also gives a beautiful golden colour to the galette once baked!

    Bake your galette in the oven at 400°F for 30-35 minutes until golden brown.

    Remove from oven and allow to cool for 5 minutes before serving! Top with a dollop of whipped cream or your favourite vanilla ice cream!
