This recipe was kindly contributed by our friends at Scout Canning. Scout's Classic Lobster Roll by Chef Charlotte Langley combines Scout's beautiful Atlantic lobster with creamy local dairy to create this delicious all Canadian lobster roll.
This dish is one of Scout's all time favourite ways to prepare Scout Lobster and they are certain it will be one of yours as well!
Serve the lobster roll with potato crisps and a pint of lager for a tasty lunch!
Cook time: 15- 20 minutes
Serving Size: 2 for lunch or 4-6 if portioned into bite sized pieces
Meal time: lunch, dinner or an appetizer
Ingredients:
- 1 can of Scout Lobster
- 200 gm tempered Euro-style cream cheese
- ¼ cup of sour cream
- ¼ cup of tempered, unsalted butter
- ½ cup of fresh, chopped herbs of your choice
- 1 lemon
Tools you will need:
- Small stainless steel bowl
- Medium sized frying pan
- Rubber spatula
Instructions:
Drain one can of Scout Lobster and reserve the oil and butter for later.
In your bowl, gently fold together the lobster, butter, sour cream, and cream cheese and add a sprinkling of fine herbs.
In a medium sized frying pan, place the reserved liquid and heat it to toast the buns in.
Once each side is toasted and golden, stuff each bun with the lobster filling and garnish with remaining herbs and some lemon zest.
