The Hughes family bought their first farm in 1994, and in 2000 started producing Verjus and now is the largest producer of Verjus in Ontario. Their Verjus is the only Verjus in Canada for which the labeling and production is approved to CFIA standards .

Hughes Vineyards has developed methods to showcase the terroir which work with natural processes. These include native plant strips down row centers to create habitat for beneficial insects, minimal tilling and permanent cover crops to improve soil health, spray program to less the impact of pesticides on the environment, as shown in the picture above.

Hughes Vineyards is the only independent grape farm certified sustainable in Ontario by the Grape Growers of Ontario, and was recognized in 2010 with a Premier’s Award for the development of a fully dedicated outside biologically pest control program.

Hughes Vineyard’s Verjus is made from Pinot Noir using whole cluster pressing to preserve the fruit and reduce the harsh phenolics. Verjus is an excellent acid alternative to lemon, white wine or vinegar for dressings, marinades, and sauces. It's also great in a spritzer as a wine alternative!
