    About:

    Gunn’s Hill is a small, artisanal dairy located in Woodstock. Shep Ysselstein crafts small-batch cheeses made with a marked Swiss influence. Shep’s family have been farming in the region since the 1950s.

    Shep sources the milk for their line of cheeses from his family farm - Friesvale Farms. Some of their most popular cheese’s include Oxford’s Harvest, 5 Brothers, and Handeck (so named for the town in Switzerland where Shep studied cheesemaking!).

    Brie, Brigid's Wheel (180g)

    Brie Cheese from Gunn's Hill Artisan Cheese, their "Brigid's Brie" is a soft surface ripened cheese made with cow's milk from their family farm. This brie is free of stabilizers and preservatives and thus sold with a 'best between' date for your enjoyment. Each batch is aged six weeks and is delicately handled to preserve it's creamy centre. This brie is best enjoyed on it's own or with a flavoured jelly (check out our Provisions Jellies in our Grocery section for the perfect compliment).

    Cheese "Five Brothers" Surface Ripened Swiss Style Cow's Milk 170g CATCH WEIGHT

    Five Brother's Cheese is produced by Gunn's Hill Artisan Cheese. This is a handcrafted washed-rind cow's milk cheese that combines traits from Gouda and another Swiss variety called Appenzeller. It is available at 8 months old. It is delicately aged on cedar wood planks adding robust flavors to the cheese. It has creamy and rich flavors with sweeter overtones and distinctive eyes throughout the body of the cheese.

    Pairs well with white wines such as Chardonnay and Sauvignon Blanc and also Pilsner beers. Gunn’s Hill is a small, artisanal dairy located in Woodstock.     Cheese "Handeck" Surface Ripened Comte 170g wedge CATCH WEIGHT

    Handeck Cheese is a handcrafted washed-rind cow's milk cheese that is produced using the same methods as a typical Swiss mountain style cheese. It is available at 24 months old. It is delicately aged on cedar wood planks adding robust flavors to the cheese. It is a drier hard cheese with very rich and complex flavors and nutty overtones.

    Cheese Oxford Harvest "Moo Brew" Espresso Rubbed Swiss Style Cow's Milk 170g wedge

    Gunn's Hill "Moo Brew" is a hand crafted cow's milk cheese that is modeled after a little known Swiss cheese called Mutchli. It is a mild, creamy cheese with buttery flavours. It is rubbed with an espresso blend from Early Bird Coffee in Woodstock and then continues to age for three months.

    Cheese, "Dark Side of the Moo" Stout Soaked (~170g)

    Gunn's Hill "Dark Side of the Moo" stout soaked cheese is a hand crafted cow's milk cheese modeled after a Swiss cheese called Mutchli. This cheese is mild with a creamy texture and buttery flavour. "Dark Side of the Moo" is soaked for four days in Dark Side Chocolate Stout from Woodstock's Upper Thames Brewery - hence the name! The cheese is then aged for four months before it is ready to be enjoyed.
