    This week we've cooked up an eggplant dish that will make eggplant lovers rejoice and hopefully win over some eggplant skeptics! In this recipe, we made eggplant steaks by cutting, scoring and roasting our St. David's eggplants spiced with Zing's Zesti seasoning. Eggplant goes so beautifully with tomatoes and fresh herbs so we paired these steaks with a bright tomato salad made with our Elmira's grape tomatoes, fresh mint, honey, garlic, and red onion, served on a bed of Lundberg Farms lemon Jasmine rice. A perfect plant based dish that celebrates this truly unique vegetable!

Bucatini pasta is similar to spaghetti but is a thicker noodle with a hollow center to soak up extra sauce! We paired this pasta with a rich tomato, chili, honey and balsamic based sauced that is packed with flavour. Sweet, salty, and slightly spicy, this sauce is perfectly balanced by the delicate and creamy flavour of our Bella Casara by Quality Cheese classic burrata. The result is absolutely divine.     A true marvel, the popover is a delicious bread-like creation that is satisfyingly crispy on the outside, and fluffy and soft on the inside. Made using just a few simple, staple ingredients. All you need to whip up a basic popover recipe are eggs, milk, salt, and flour. Once you've tried these bad boys, they'll be you new go-to side for any meal! We added our Grand Trunk Gruyere-style cheese from Stonetown Cheese and added some fresh organic rosemary to these popovers. The result were these perfectly cheesy popovers with a hint of rosemary that pairs perfectly with the salty and nutty notes of the Grand Trunk cheese but feel free to substitute your favourite herb and cheese combo of choice in this recipe.
